Ingredients
- Spaghetti squash - 1 medium (about 1 kg)
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Marinara sauce - 1 cup
- Mozzarella cheese, shredded - 1 cup
- Parmesan cheese, grated - 1/4 cup
- Fresh basil, chopped - 2 tablespoons (optional for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside of the squash halves with olive oil and season with salt, black pepper, and garlic powder.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper and bake for 30-35 minutes, or until the flesh is tender and can be easily shredded with a fork.
- While the squash is baking, heat the marinara sauce in a small saucepan over low heat.
- Once the squash is done, let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
- In a mixing bowl, combine the spaghetti squash strands with the warm marinara sauce and half of the mozzarella cheese.
- Transfer the mixture back into the squash halves and top with the remaining mozzarella cheese and the grated Parmesan cheese.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, and garnish with fresh basil before serving.
