Ingredients

  • Spaghetti squash - 1 medium (about 1 kg)
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Marinara sauce - 1 cup
  • Mozzarella cheese, shredded - 1 cup
  • Parmesan cheese, grated - 1/4 cup
  • Fresh basil, chopped - 2 tablespoons (optional for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of the squash halves with olive oil and season with salt, black pepper, and garlic powder.
  4. Place the squash halves cut-side down on a baking sheet lined with parchment paper and bake for 30-35 minutes, or until the flesh is tender and can be easily shredded with a fork.
  5. While the squash is baking, heat the marinara sauce in a small saucepan over low heat.
  6. Once the squash is done, let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
  7. In a mixing bowl, combine the spaghetti squash strands with the warm marinara sauce and half of the mozzarella cheese.
  8. Transfer the mixture back into the squash halves and top with the remaining mozzarella cheese and the grated Parmesan cheese.
  9. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, let cool for a few minutes, and garnish with fresh basil before serving.
