Ingredients

  • Salmon fillets - 2 x 150g
  • Asparagus - 200g
  • Olive oil - 2 tablespoons
  • Lemon - 1 (juiced and zested)
  • Garlic - 2 cloves (minced)
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. While the oven is preheating, trim the tough ends off the asparagus and place them on a baking sheet.
  3. In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and black pepper.
  4. Drizzle half of the olive oil mixture over the asparagus and toss to coat evenly.
  5. Push the asparagus to one side of the baking sheet and place the salmon fillets on the other side.
  6. Brush the remaining olive oil mixture over the salmon fillets.
  7. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork and the asparagus is tender.
  8. Remove from the oven and let rest for a minute before serving.
