- Salmon fillets - 2 x 150g
- Asparagus - 200g
- Olive oil - 2 tablespoons
- Lemon - 1 (juiced and zested)
- Garlic - 2 cloves (minced)
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- While the oven is preheating, trim the tough ends off the asparagus and place them on a baking sheet.
- In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and black pepper.
- Drizzle half of the olive oil mixture over the asparagus and toss to coat evenly.
- Push the asparagus to one side of the baking sheet and place the salmon fillets on the other side.
- Brush the remaining olive oil mixture over the salmon fillets.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork and the asparagus is tender.
