- Fresh dill - 2 sprigs, for garnish
- Asparagus - 200g, trimmed
- Cherry tomatoes - 100g, halved
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Place the salmon fillets on a baking tray lined with parchment paper and brush the olive oil mixture generously over the top.
- Arrange the asparagus and cherry tomatoes around the salmon on the tray, drizzling them with a little olive oil and seasoning with salt and pepper.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
