Ingredients

  • Salmon fillet - 2 pieces (150g each)
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh dill - 2 sprigs, for garnish
  • Asparagus - 200g, trimmed
  • Cherry tomatoes - 100g, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  3. Place the salmon fillets on a baking tray lined with parchment paper and brush the olive oil mixture generously over the top.
  4. Arrange the asparagus and cherry tomatoes around the salmon on the tray, drizzling them with a little olive oil and seasoning with salt and pepper.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  6. Remove from the oven, garnish with fresh dill, and serve immediately.
