- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon

- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Frozen peas - 1/2 cup
- Cream cheese - 100 grams, softened
- Shredded cheddar cheese - 1/2 cup
- Dried oregano - 1 teaspoon

- Breadcrumbs - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- In a medium pot, combine the rice and vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are soft and fragrant, about 3-4 minutes.
- Add the diced bell pepper, zucchini, carrot, and frozen peas to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- In a large bowl, combine the cooked rice, sautéed vegetables, softened cream cheese, half of the shredded cheddar cheese, dried oregano, salt, and black pepper. Mix well until everything is evenly combined.
- Transfer the mixture to a greased baking dish and spread it out evenly. Top with the remaining cheddar cheese and sprinkle breadcrumbs over the top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Remove from the oven and let it cool for 5 minutes before serving.
