- Brown rice - 1 cup
- Vegetable broth - 2 cups

- Bell pepper, diced - 1/2 medium
- Zucchini, diced - 1/2 medium
- Cherry tomatoes, halved - 1/2 cup
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shredded mozzarella cheese - 1/2 cup
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced bell pepper and zucchini, cooking for an additional 5 minutes until slightly softened.
- Add the brown rice to the saucepan, stirring well to combine with the vegetables.
- Pour in the vegetable broth, dried oregano, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and transfer the rice mixture to a greased 1.5-liter baking dish. Gently fold in the cherry tomatoes and half of the shredded mozzarella cheese.
- Top with the remaining mozzarella cheese and cover the dish with aluminum foil.
- Bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
