Ingredients

  • Brown rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Onion, diced - 1 small
  • Garlic, minced - 2 cloves
  • Bell pepper, diced - 1/2 medium
  • Zucchini, diced - 1/2 medium
  • Cherry tomatoes, halved - 1/2 cup
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shredded mozzarella cheese - 1/2 cup
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced bell pepper and zucchini, cooking for an additional 5 minutes until slightly softened.
  4. Add the brown rice to the saucepan, stirring well to combine with the vegetables.
  5. Pour in the vegetable broth, dried oregano, salt, and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and transfer the rice mixture to a greased 1.5-liter baking dish. Gently fold in the cherry tomatoes and half of the shredded mozzarella cheese.
  8. Top with the remaining mozzarella cheese and cover the dish with aluminum foil.
  9. Bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
