Ingredients

  • Rabbit - 500 grams, cut into pieces
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Carrots - 2 medium, sliced
  • Celery - 2 stalks, chopped
  • Onion - 1 medium, chopped
  • Chicken broth - 250 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides, about 5-7 minutes.
  3. Remove the rabbit from the skillet and set aside. In the same skillet, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the minced garlic, chopped rosemary, and thyme, and cook for another minute until fragrant.
  5. Return the rabbit pieces to the skillet. Pour in the chicken broth and season with salt and black pepper.
  6. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
  7. Bake for 60 minutes, then remove the cover and bake for an additional 15-20 minutes until the rabbit is cooked through and tender.
  8. Remove from the oven, let it rest for a few minutes, and serve warm.
