- Rabbit - 500 grams, cut into pieces
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Carrots - 2 medium, sliced
- Celery - 2 stalks, chopped
- Onion - 1 medium, chopped
- Chicken broth - 250 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides, about 5-7 minutes.
- Remove the rabbit from the skillet and set aside. In the same skillet, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the minced garlic, chopped rosemary, and thyme, and cook for another minute until fragrant.
- Return the rabbit pieces to the skillet. Pour in the chicken broth and season with salt and black pepper.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 60 minutes, then remove the cover and bake for an additional 15-20 minutes until the rabbit is cooked through and tender.
- Remove from the oven, let it rest for a few minutes, and serve warm.
