- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
Steps
- Preheat the oven to 200°C (400°F).
- Scrub the potatoes under running water to clean them, then dry them with a towel.
- Prick each potato several times with a fork, then rub them with olive oil, sea salt, and black pepper.
- Place the potatoes directly on the oven rack and bake for 40-45 minutes, or until tender when pierced with a fork.
- Once baked, remove the potatoes from the oven and let them cool for about 10 minutes.
- Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato on the skin.
- Brush the insides of the potato skins with a little more olive oil, then return them to the oven, cut side up.
- Bake the skins for an additional 10-15 minutes, or until they are golden and crispy.
- Remove from the oven and sprinkle the shredded cheddar cheese evenly into each skin.
- Return the skins to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Serve warm topped with sour cream, chopped chives, and parsley.
