Ingredients

  • 2 medium russet potatoes - 300 grams
  • 1 tablespoon olive oil - 15 ml
  • 1/2 cup Greek yogurt - 120 grams
  • 1/2 cup low-fat shredded cheddar cheese - 60 grams
  • 1/4 cup green onions, chopped - 25 grams
  • 1/2 teaspoon garlic powder - 2 grams
  • 1/2 teaspoon onion powder - 2 grams
  • Salt - to taste
  • Black pepper - to taste
  • 1/4 cup broccoli florets, steamed - 35 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes, then pierce them several times with a fork. Bake in the preheated oven for 30-35 minutes, or until tender.
  3. While the potatoes are baking, prepare the casserole mixture. In a bowl, combine the Greek yogurt, half of the shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix well.
  4. Once the potatoes are cooked, let them cool slightly, then cut them in half and scoop out the insides into the yogurt mixture. Mash the potatoes until smooth and well combined.
  5. Fold in the chopped green onions and steamed broccoli.
  6. Spoon the potato mixture back into the potato skins, then top with the remaining cheddar cheese.
  7. Return the filled potato skins to the oven and bake for an additional 10 minutes, or until the cheese is melted and golden.
  8. Remove from the oven, let cool for a few minutes, and serve hot.
