  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a medium oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the pot, cooking until the mushrooms are softened, about 5 minutes.
  4. Stir in the Arborio rice, coating it with the oil and allowing it to toast for 1-2 minutes.
  5. Pour in the vegetable broth and add the chopped thyme, salt, and black pepper. Stir well to combine.
  6. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
  7. Bake for 25 minutes, then remove from the oven and stir in the grated Parmesan cheese.
  8. Return to the oven uncovered for an additional 5 minutes to allow the cheese to melt.
