  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper to create a marinade.

  4. Arrange the marinated chicken thighs skin-side up in the baking dish and bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 75°C (165°F) and the skin is crispy.
  5. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley.
