  • Eggs - 4 large
  • Spinach - 100 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 50 grams, diced
  • Onion - 50 grams, diced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion and red bell pepper until softened, about 5 minutes.
  3. Add the fresh spinach and cook until wilted, about 2 minutes.
  4. In a mixing bowl, whisk the eggs, then season with salt, black pepper, and dried oregano.
  5. Stir in the halved cherry tomatoes and crumbled feta cheese into the egg mixture.
  6. Pour the egg mixture over the sautéed vegetables in the skillet, spreading it evenly.
