- Cherry tomatoes - 100 grams, halved
- Red bell pepper - 50 grams, diced
- Onion - 50 grams, diced
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the diced onion and red bell pepper until softened, about 5 minutes.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- In a mixing bowl, whisk the eggs, then season with salt, black pepper, and dried oregano.
- Stir in the halved cherry tomatoes and crumbled feta cheese into the egg mixture.
