Ingredients

  • Feta cheese - 200 grams
  • Cherry tomatoes - 300 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Zucchini - 2 medium, spiralized
  • Fresh basil - 1/4 cup, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and minced garlic.
  3. Drizzle olive oil over the feta and tomatoes, and sprinkle with red pepper flakes, salt, and black pepper.
  4. Bake in the preheated oven for 20 minutes, until the feta is soft and the tomatoes are blistered.
  5. While the feta and tomatoes are baking, spiralize the zucchini into noodles and sauté in a pan over medium heat for 3-5 minutes until just tender.
  6. Remove the baking dish from the oven, and using a fork, mix the feta and tomatoes together to create a creamy sauce.
  7. Add the sautéed zucchini noodles to the baking dish and toss well to combine.
  8. Garnish with fresh basil before serving.
