  • Chickpeas - 240 grams (1 cup, cooked and drained)
  • Fresh parsley - 15 grams (1/2 cup, chopped)
  • Fresh cilantro - 15 grams (1/2 cup, chopped)
  • Red onion - 50 grams (1/4 cup, chopped)
  • Garlic - 2 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Breadcrumbs - 30 grams (1/4 cup)
  • Mini slider buns - 4 pieces
  • Lettuce - 4 leaves
  • Tomato - 1 medium (sliced)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a food processor, combine the cooked chickpeas, parsley, cilantro, red onion, garlic, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is well combined but still slightly chunky.
  3. Transfer the mixture to a bowl, then mix in the olive oil and breadcrumbs until fully incorporated.
  4. Shape the mixture into small patties, about 4 cm in diameter, and place them on the prepared baking sheet.
  5. Bake the falafel patties in the preheated oven for about 20 minutes, flipping halfway through, until they are golden brown and crispy.
  6. While the falafel is baking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl; add water to reach desired consistency.
  7. Assemble the sliders by placing a falafel patty on each mini bun, topping with lettuce, tomato, and a drizzle of tahini sauce.
