- Red onion - 50 grams (1/4 cup, chopped)
- Garlic - 2 cloves (minced)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Breadcrumbs - 30 grams (1/4 cup)
- Mini slider buns - 4 pieces
- Lettuce - 4 leaves
- Tomato - 1 medium (sliced)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a food processor, combine the cooked chickpeas, parsley, cilantro, red onion, garlic, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is well combined but still slightly chunky.
- Transfer the mixture to a bowl, then mix in the olive oil and breadcrumbs until fully incorporated.
- Shape the mixture into small patties, about 4 cm in diameter, and place them on the prepared baking sheet.
- Bake the falafel patties in the preheated oven for about 20 minutes, flipping halfway through, until they are golden brown and crispy.
- While the falafel is baking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl; add water to reach desired consistency.
- Assemble the sliders by placing a falafel patty on each mini bun, topping with lettuce, tomato, and a drizzle of tahini sauce.
