Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1/2 inch (1.25 cm) thick rounds and sprinkle both sides with salt. Let it sit for about 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water to remove excess salt and pat them dry with paper towels.
- In a large bowl, toss the eggplant slices with olive oil, black pepper, and garlic powder until evenly coated.
- Arrange the eggplant slices in a single layer on a baking sheet. Bake in the preheated oven for about 20 minutes, flipping halfway through, until golden and tender.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the baked eggplant slices, half of the marinara sauce, half of the shredded mozzarella, and half of the grated Parmesan.
