  • Almond flour - 1/2 cup (60g)
  • Parmesan cheese, grated - 1/4 cup (25g)
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Slice the eggplant into fry-shaped sticks, about 1 cm thick.
  3. In a bowl, whisk the egg until frothy.
  4. In another bowl, combine almond flour, grated Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Dip each eggplant stick into the egg mixture, allowing excess to drip off, then coat thoroughly with the almond flour mixture.
