- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Canned diced tomatoes - 1 cup (240 grams)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Mozzarella cheese - 1 cup (100 grams), shredded
- Parmesan cheese - 1/4 cup (25 grams), grated
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the drained chickpeas, diced tomatoes, cumin, paprika, salt, and black pepper. Let the mixture simmer for 10 minutes, then remove from heat.
- In a baking dish, layer half of the eggplant slices on the bottom. Spread half of the chickpea mixture over the eggplant.
- Repeat the layers with the remaining eggplant and chickpea mixture.
- Top the casserole with shredded mozzarella and grated Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving. Garnish with chopped parsley.
