Ingredients

  • Eggplant - 1 medium (about 250 grams)
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Canned diced tomatoes - 1 cup (240 grams)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Mozzarella cheese - 1 cup (100 grams), shredded
  • Parmesan cheese - 1/4 cup (25 grams), grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  5. Add the minced garlic and cook for an additional 1 minute until fragrant.
  6. Stir in the drained chickpeas, diced tomatoes, cumin, paprika, salt, and black pepper. Let the mixture simmer for 10 minutes, then remove from heat.
  7. In a baking dish, layer half of the eggplant slices on the bottom. Spread half of the chickpea mixture over the eggplant.
  8. Repeat the layers with the remaining eggplant and chickpea mixture.
  9. Top the casserole with shredded mozzarella and grated Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  12. Let the casserole cool for a few minutes before serving. Garnish with chopped parsley.
