Ingredients
- Eggplant - 1 medium (about 250g)
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Canned diced tomatoes - 1 cup (240g)
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Feta cheese - 50g, crumbled (optional, for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out excess moisture.
- Rinse the eggplant under cold water and pat dry with paper towels.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, ground cumin, and paprika to the skillet, cooking for an additional 1 minute until fragrant.
- Stir in the canned diced tomatoes and chickpeas, and season with salt and black pepper. Simmer for 5 minutes.
- In a baking dish, arrange the eggplant slices in a single layer and pour the chickpea-tomato mixture over the top, spreading it evenly.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the eggplant is tender and slightly browned.
- Garnish with fresh parsley and serve hot, adding crumbled feta cheese if desired.
