Ingredients

  • Cod fillets - 2 x 150g
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200g, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the olive oil, chopped parsley, chopped dill, minced garlic, lemon zest, lemon juice, salt, and black pepper.
  3. Place the cod fillets in a baking dish and brush the herb mixture evenly over the top of the fillets.
  4. Surround the cod with halved cherry tomatoes.
  5. Bake in the preheated oven for 20 minutes, or until the cod is cooked through and flakes easily with a fork.
