  • 2 large poblano peppers

  • 1/4 cup diced tomatoes (fresh or canned)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro (optional for garnish)
  • 1/2 avocado, sliced (optional for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roast the poblano peppers directly over a gas flame or in the oven until the skins are blistered and charred, about 10-15 minutes. Place them in a bowl and cover to steam for 5 minutes.
  3. While the peppers steam, in a mixing bowl, combine cooked quinoa, black beans, shredded cheese, diced tomatoes, cumin, paprika, garlic powder, salt, and pepper. Mix well.
  4. After steaming, peel the charred skin off the poblanos and make a slit down the side of each pepper to remove the seeds carefully.
  5. Stuff each poblano with the quinoa mixture, pressing gently to pack it in.
  6. Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
  7. Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until heated through and cheese is bubbly.
  8. Remove from the oven, garnish with fresh cilantro if desired, and serve with avocado slices.
