- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder

Steps
- Preheat the oven to 200°C (400°F).
- Roast the poblano peppers directly over a gas flame or in the oven until the skins are blistered and charred, about 10-15 minutes. Place them in a bowl and cover to steam for 5 minutes.
- While the peppers steam, in a mixing bowl, combine cooked quinoa, black beans, shredded cheese, diced tomatoes, cumin, paprika, garlic powder, salt, and pepper. Mix well.
- After steaming, peel the charred skin off the poblanos and make a slit down the side of each pepper to remove the seeds carefully.
- Stuff each poblano with the quinoa mixture, pressing gently to pack it in.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
- Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until heated through and cheese is bubbly.
- Remove from the oven, garnish with fresh cilantro if desired, and serve with avocado slices.
