Ingredients

  • Chicken breast - 2 pieces (about 300g each)
  • Fresh spinach - 150g
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Cream cheese - 100g, softened
  • Parmesan cheese - 50g, grated
  • Cherry tomatoes - 100g, halved
  • Bell pepper - 1 medium, diced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
  4. In a bowl, mix the softened cream cheese, grated Parmesan cheese, oregano, thyme, salt, and pepper until well combined.
  5. Place the chicken breasts in a baking dish and season both sides with salt and pepper. Spread the cheese mixture evenly over the top of each chicken breast.
  6. Top the chicken with the sautéed spinach, diced bell pepper, and halved cherry tomatoes.
  7. Drizzle the remaining tablespoon of olive oil over the vegetables. Season with additional salt and pepper if desired.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the cheese is bubbly and slightly golden.
  9. Let the dish cool for a few minutes before serving.
