- Chicken breast - 2 pieces (about 300g each)
- Fresh spinach - 150g
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Cream cheese - 100g, softened
- Parmesan cheese - 50g, grated
- Cherry tomatoes - 100g, halved
- Bell pepper - 1 medium, diced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
- In a bowl, mix the softened cream cheese, grated Parmesan cheese, oregano, thyme, salt, and pepper until well combined.
- Place the chicken breasts in a baking dish and season both sides with salt and pepper. Spread the cheese mixture evenly over the top of each chicken breast.
- Top the chicken with the sautéed spinach, diced bell pepper, and halved cherry tomatoes.
- Drizzle the remaining tablespoon of olive oil over the vegetables. Season with additional salt and pepper if desired.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the cheese is bubbly and slightly golden.
- Let the dish cool for a few minutes before serving.
