Ingredients

  • Chicken breasts - 2 pieces (about 200g each)
  • Fresh spinach - 150g
  • Garlic - 3 cloves, minced
  • Cream cheese - 100g
  • Shredded mozzarella cheese - 50g
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Italian seasoning - 1/2 teaspoon
  • Parmesan cheese - 30g, grated

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked spinach and garlic with cream cheese, salt, black pepper, and Italian seasoning. Mix until well combined.
  5. Place the chicken breasts on a baking dish and make a pocket in each by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast pocket with the spinach and cream cheese mixture, then sprinkle shredded mozzarella and grated Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Remove from the oven and let rest for a few minutes before serving.
