Ingredients
- Chicken breasts - 2 pieces (about 200g each)
- Fresh spinach - 150g
- Garlic - 3 cloves, minced
- Cream cheese - 100g
- Shredded mozzarella cheese - 50g
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Italian seasoning - 1/2 teaspoon
- Parmesan cheese - 30g, grated
Steps
- Preheat your oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach and garlic with cream cheese, salt, black pepper, and Italian seasoning. Mix until well combined.
- Place the chicken breasts on a baking dish and make a pocket in each by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast pocket with the spinach and cream cheese mixture, then sprinkle shredded mozzarella and grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let rest for a few minutes before serving.
