Ingredients

  • 2 chicken thighs (bone-in, skin-on)
  • 200 grams fresh spinach
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 50 grams grated Parmesan cheese

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the olive oil, minced garlic, paprika, lemon juice, salt, and pepper to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for about 10 minutes.
  4. While the chicken is marinating, heat a skillet over medium heat and add a bit of olive oil.
  5. Sauté the fresh spinach until wilted, about 3-4 minutes. Remove from heat and set aside.
  6. In a baking dish, place the marinated chicken thighs skin-side up. Bake in the preheated oven for 25 minutes.
  7. After 25 minutes, remove the dish from the oven and spread the sautéed spinach over the chicken thighs.
  8. Sprinkle grated Parmesan cheese on top of the spinach and chicken.
  9. Return the dish to the oven and bake for an additional 10 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the cheese is golden.
