- 200 grams fresh spinach
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 50 grams grated Parmesan cheese
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, mix the olive oil, minced garlic, paprika, lemon juice, salt, and pepper to create a marinade.

- While the chicken is marinating, heat a skillet over medium heat and add a bit of olive oil.
- Sauté the fresh spinach until wilted, about 3-4 minutes. Remove from heat and set aside.
- In a baking dish, place the marinated chicken thighs skin-side up. Bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the dish from the oven and spread the sautéed spinach over the chicken thighs.
- Sprinkle grated Parmesan cheese on top of the spinach and chicken.
- Return the dish to the oven and bake for an additional 10 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the cheese is golden.
- Remove from the oven and let rest for 5 minutes before serving.
