Ingredients

  • 2 boneless, skinless chicken breasts - 300 grams
  • 150 grams fresh spinach
  • 100 grams cream cheese, softened
  • 50 grams shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the cooked spinach, cream cheese, and shredded mozzarella cheese. Mix well until fully combined.
  5. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the spinach and cheese mixture, securing the opening with toothpicks if necessary.
  7. Season the outside of the chicken breasts with paprika, salt, and black pepper.
  8. Place the stuffed chicken breasts in a baking dish and sprinkle grated Parmesan cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  10. Remove from the oven, let rest for 5 minutes, then serve warm.
