Ingredients

  • Chicken breasts - 2 (about 300g each)
  • Fresh spinach - 150g, chopped
  • Cream cheese - 100g, softened
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Parmesan cheese - 30g, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Mozzarella cheese - 50g, shredded

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the softened cream cheese, cooked spinach, grated Parmesan cheese, salt, pepper, and oregano. Mix until well blended.
  5. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  6. Stuff each chicken breast with the spinach and cream cheese mixture, securing with toothpicks if necessary.
  7. Place the stuffed chicken breasts in a baking dish and sprinkle the shredded mozzarella cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  9. Remove from the oven and let rest for 5 minutes before serving.
