- Fresh spinach - 150g, chopped
- Cream cheese - 100g, softened
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Parmesan cheese - 30g, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Mozzarella cheese - 50g, shredded
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the softened cream cheese, cooked spinach, grated Parmesan cheese, salt, pepper, and oregano. Mix until well blended.
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and cream cheese mixture, securing with toothpicks if necessary.
- Place the stuffed chicken breasts in a baking dish and sprinkle the shredded mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven and let rest for 5 minutes before serving.
