  • 2 Chicken thighs (bone-in, skin-on)
  • 2 tablespoons Olive oil
  • 1 Lemon (zested and juiced)
  • 4 cloves Garlic (minced)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
