Ingredients

  • Chicken breast - 2 pieces (200g each)
  • Fresh spinach - 200g
  • Garlic - 4 cloves, minced
  • Cream cheese - 100g, softened
  • Mozzarella cheese - 100g, shredded
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and stir in cream cheese until well combined.
  4. Season the chicken breasts with salt, black pepper, oregano, and thyme on both sides.
  5. In a baking dish, place the seasoned chicken breasts. Spread the spinach and cream cheese mixture evenly over the top of each chicken breast.
  6. Sprinkle shredded mozzarella cheese on top of the spinach mixture.
  7. Drizzle the remaining tablespoon of olive oil over the chicken and cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 75°C or 165°F).
  9. Remove from the oven, let it rest for 5 minutes, and garnish with chopped parsley before serving.
