Ingredients

  • 2 chicken breasts - 300 grams
  • 2 cups fresh spinach - 60 grams
  • 4 cloves garlic - minced
  • 2 tablespoons olive oil - 30 ml
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese - 25 grams
  • 1 tablespoon lemon juice - 15 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine olive oil, minced garlic, oregano, salt, black pepper, red pepper flakes, and lemon juice.
  3. Add the chicken breasts to the bowl and coat them well with the marinade. Let them sit for about 10 minutes to absorb the flavors.
  4. In a skillet over medium heat, add the spinach and sauté until wilted, about 2-3 minutes. Remove from heat.
  5. Place the marinated chicken breasts in a baking dish and top evenly with the sautéed spinach.
  6. Sprinkle the grated Parmesan cheese over the chicken and spinach.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let rest for 5 minutes before serving.
