Ingredients

  • Cooked chicken breast, shredded - 200 grams
  • Whole wheat tortillas - 4 pieces
  • Black beans, canned, drained and rinsed - 100 grams
  • Corn, canned, drained - 100 grams
  • Red bell pepper, diced - 1 medium
  • Green onions, chopped - 2 stalks
  • Low-fat shredded cheese (cheddar or Mexican blend) - 100 grams
  • Tomato sauce - 200 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the diced red bell pepper until softened, about 3-4 minutes.
  3. In a large bowl, combine shredded chicken, black beans, corn, sautéed bell pepper, green onions, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
  4. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  5. Take a tortilla, fill it with about 1/4 of the chicken mixture, roll it up tightly, and place it seam-side down in the baking dish. Repeat for the remaining tortillas.
  6. Pour the remaining tomato sauce evenly over the enchiladas and sprinkle the shredded cheese on top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
  9. Let cool for a few minutes before serving.
