- Cooked chicken breast, shredded - 200 grams
- Whole wheat tortillas - 4 pieces
- Black beans, canned, drained and rinsed - 100 grams
- Corn, canned, drained - 100 grams
- Red bell pepper, diced - 1 medium
- Green onions, chopped - 2 stalks
- Low-fat shredded cheese (cheddar or Mexican blend) - 100 grams
- Tomato sauce - 200 grams
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the diced red bell pepper until softened, about 3-4 minutes.
- In a large bowl, combine shredded chicken, black beans, corn, sautéed bell pepper, green onions, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Take a tortilla, fill it with about 1/4 of the chicken mixture, roll it up tightly, and place it seam-side down in the baking dish. Repeat for the remaining tortillas.
- Pour the remaining tomato sauce evenly over the enchiladas and sprinkle the shredded cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
- Let cool for a few minutes before serving.
