  • Boneless, skinless chicken breast - 200 grams, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 100 grams, softened
  • Shredded mozzarella cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until the onion is translucent.
  4. Add the diced chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes.
