- Chicken thighs - 2 pieces (about 300g)
- Sweet potatoes - 2 medium (about 400g)
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the sweet potatoes into 1-inch cubes.
- In a large bowl, combine the sweet potatoes with 1 tablespoon of olive oil, half the garlic powder, half the paprika, half the dried thyme, and a pinch of salt and pepper. Toss to coat evenly.
- Place the sweet potatoes on one side of a baking sheet lined with parchment paper.
- In the same bowl, add the chicken thighs and drizzle with the remaining tablespoon of olive oil, the rest of the garlic powder, paprika, thyme, salt, and pepper. Rub the seasoning onto the chicken.
- Place the chicken thighs on the other side of the baking sheet, skin-side up.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature should reach 75°C/165°F) and the sweet potatoes are tender.
- Remove from the oven and let rest for 5 minutes before serving.
- Garnish with chopped fresh parsley before serving.
