  • Unsalted butter - 30 grams
  • Garlic - 1 clove, minced
  • Gluten-free all-purpose flour - 30 grams
  • Milk - 250 ml
  • Cheddar cheese - 100 grams, grated
  • Parmesan cheese - 30 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot of boiling salted water, cook the cauliflower florets for about 5 minutes until slightly tender. Drain and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Whisk in the gluten-free flour and cook for 1-2 minutes, stirring continuously to form a roux.
  5. Gradually add the milk, whisking constantly until the mixture thickens, about 3-5 minutes.
  6. Stir in the grated cheddar cheese, salt, black pepper, and nutmeg until the cheese is melted and the sauce is smooth.
  7. In a baking dish, combine the cooked cauliflower and cheese sauce, mixing until the florets are well coated.
  8. Sprinkle the grated Parmesan cheese evenly over the top.
  9. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  10. Remove from the oven, let cool slightly, and garnish with chopped parsley before serving.
