- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, diced
- Corn kernels - 100 grams, fresh or frozen
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Breadcrumbs - 50 grams
- Fresh parsley - for garnish, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion and bell pepper until soft, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the drained navy beans, diced tomatoes (with juices), corn, soy sauce, brown sugar, ground cumin, smoked paprika, salt, and black pepper.
- Bring the mixture to a simmer and cook for 5-10 minutes to allow the flavors to meld.
- Transfer the bean mixture to a small baking dish and spread it evenly.
- In a separate bowl, mix the breadcrumbs with a drizzle of olive oil to coat them lightly.
- Sprinkle the breadcrumbs evenly over the bean mixture in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.
