  • Avocado - 2 large
  • Canned tuna in water - 200 grams, drained
  • Greek yogurt - 4 tablespoons
  • Dijon mustard - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Chopped fresh parsley - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Shredded cheese (optional) - 1/4 cup

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Cut the avocados in half and remove the pits. Scoop out a little extra flesh to create a larger cavity for the filling.
  3. In a mixing bowl, combine the drained tuna, Greek yogurt, Dijon mustard, lemon juice, chopped parsley, salt, black pepper, and paprika. Mix until well combined.
  4. Spoon the tuna mixture into each avocado half, pressing down slightly to pack it in.
  5. If using, sprinkle shredded cheese on top of each filled avocado.
  6. Place the avocado boats on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until heated through and the cheese is melted.
