- Avocado - 2 large
- Canned tuna in water - 200 grams, drained
- Greek yogurt - 4 tablespoons
- Dijon mustard - 1 tablespoon
- Lemon juice - 1 tablespoon
- Chopped fresh parsley - 2 tablespoons
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Shredded cheese (optional) - 1/4 cup
Steps
- Preheat your oven to 190°C (375°F).
- Cut the avocados in half and remove the pits. Scoop out a little extra flesh to create a larger cavity for the filling.
- In a mixing bowl, combine the drained tuna, Greek yogurt, Dijon mustard, lemon juice, chopped parsley, salt, black pepper, and paprika. Mix until well combined.
- Spoon the tuna mixture into each avocado half, pressing down slightly to pack it in.
- If using, sprinkle shredded cheese on top of each filled avocado.
- Place the avocado boats on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until heated through and the cheese is melted.
