Ingredients

  • All-purpose flour - 250 grams
  • Granulated sugar - 50 grams
  • Active dry yeast - 5 grams
  • Salt - 1 teaspoon
  • Milk - 120 ml
  • Unsalted butter - 40 grams, softened
  • Egg - 1 large
  • Cocoa powder - 25 grams
  • Dark chocolate, chopped - 50 grams
  • Cinnamon - 1/2 teaspoon
  • Powdered sugar - for dusting

Steps

  1. In a mixing bowl, combine flour, sugar, yeast, and salt.
  2. Warm the milk until lukewarm and add it to the dry ingredients along with the softened butter and egg. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. In a small bowl, mix cocoa powder, chopped dark chocolate, and cinnamon for the filling.
  6. Once the dough has risen, roll it out into a rectangle about 1/4 inch thick.
  7. Evenly spread the chocolate filling over the dough.
  8. Roll the dough tightly from one long side to form a log, then cut it in half lengthwise to expose the filling.
  9. Twist the two halves together and place in a greased loaf pan.
  10. Cover the pan and let it rise again for about 30 minutes.
  11. Preheat the oven to 180°C (350°F) and bake the babka for 25-30 minutes until golden brown.
  12. Let it cool slightly before dusting with powdered sugar and serving.
