Ingredients

  • All-purpose flour - 250 grams
  • Granulated sugar - 50 grams
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Whole milk - 125 ml (warm)
  • Unsalted butter - 75 grams (melted and cooled)
  • Large egg - 1
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 30 grams
  • Powdered sugar - 30 grams
  • Water - 30 ml

Steps

  1. In a mixing bowl, combine warm milk, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Add the yeast mixture, melted butter, egg, and vanilla extract. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  4. In a small bowl, mix cocoa powder and powdered sugar with water to create a smooth chocolate filling.
  5. Once the dough has risen, punch it down and roll it out into a rectangle about 1 cm thick. Spread the chocolate filling evenly over the surface.
  6. Roll the dough tightly from one long side to the other to create a log. Cut the log in half lengthwise to expose the layers.
  7. Twist the two halves together and place the twisted dough into a greased loaf pan. Cover and let it rise for another 30 minutes.
  8. Preheat your oven to 180°C (350°F). Bake the babka for about 30-35 minutes or until golden brown and cooked through.
  9. Allow to cool slightly before slicing and serve warm or at room temperature.
