- 2 large eggs
- 1 ripe avocado - 150 grams
- 1 tablespoon mayonnaise - 15 grams
- 1 teaspoon Dijon mustard - 5 grams
- 1 teaspoon lemon juice - 5 grams
- Salt - to taste
- Black pepper - to taste
- Paprika - for garnish
Steps
- Place the eggs in a saucepan, cover with water, and bring to a boil over medium heat.
- Once boiling, cover the saucepan, remove it from heat, and let the eggs sit for 10-12 minutes.
- After the time is up, transfer the eggs to a bowl of ice water for about 5 minutes to cool.
- Peel the eggs gently and slice them in half lengthwise, removing the yolks and placing them in a mixing bowl.
- In the mixing bowl with the yolks, add the ripe avocado, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
- Mash the mixture until smooth and creamy, adjusting seasoning to taste.
- Spoon or pipe the avocado mixture back into the halved egg whites.
- Sprinkle paprika on top for garnish and serve immediately.
