Ingredients

  • 2 large eggs
  • 1 ripe avocado - 150 grams
  • 1 tablespoon mayonnaise - 15 grams
  • 1 teaspoon Dijon mustard - 5 grams
  • 1 teaspoon lemon juice - 5 grams
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - for garnish

Steps

  1. Place the eggs in a saucepan, cover with water, and bring to a boil over medium heat.
  2. Once boiling, cover the saucepan, remove it from heat, and let the eggs sit for 10-12 minutes.
  3. After the time is up, transfer the eggs to a bowl of ice water for about 5 minutes to cool.
  4. Peel the eggs gently and slice them in half lengthwise, removing the yolks and placing them in a mixing bowl.
  5. In the mixing bowl with the yolks, add the ripe avocado, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  6. Mash the mixture until smooth and creamy, adjusting seasoning to taste.
  7. Spoon or pipe the avocado mixture back into the halved egg whites.
  8. Sprinkle paprika on top for garnish and serve immediately.
