Ingredients
- 1 medium beet - 150 grams
- 1 ripe avocado - 150 grams
- 1/2 cup cooked quinoa - 100 grams
- 1/2 cup chickpeas, drained and rinsed - 120 grams
- 1 clove garlic, minced - 5 grams
- 1 tablespoon olive oil - 15 ml
- 1 teaspoon ground cumin - 2 grams
- 1/2 teaspoon smoked paprika - 1 gram
- Salt - to taste
- Pepper - to taste
- 1/4 cup breadcrumbs - 30 grams
- 2 whole grain burger buns - 2 pieces
- 1 cup mixed greens - 30 grams
- 1 tablespoon Dijon mustard - 15 grams
- 1 tablespoon lemon juice - 15 ml
Steps
- Preheat the oven to 200°C (400°F). Wrap the beet in aluminum foil and roast in the oven for about 30-35 minutes, or until tender. Allow to cool, then peel and chop.
- In a mixing bowl, mash the avocado until smooth. Add the chopped beet, cooked quinoa, chickpeas, minced garlic, olive oil, ground cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Add breadcrumbs to the mixture to help bind the ingredients. Form the mixture into two patties.
- Heat a non-stick skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
- Toast the whole grain burger buns in the skillet for 1-2 minutes until lightly crispy.
- Assemble the burgers by spreading Dijon mustard and lemon juice on the bottom bun, adding the mixed greens, followed by the beet and avocado patties. Top with the other half of the bun and serve.
