  • canned black beans - 1 cup, drained and rinsed
  • ripe avocado - 1 medium, peeled and pitted
  • bread crumbs - 1/2 cup
  • onion - 1/4 cup, finely chopped
  • garlic - 2 cloves, minced
  • cumin - 1 teaspoon
  • paprika - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 1 tablespoon
  • whole wheat burger buns - 2
  • lettuce leaves - 2
  • tomato - 1 medium, sliced
  • red onion - 1/4 cup, sliced
  • sriracha sauce - 2 tablespoons (optional)

Steps

  1. In a mixing bowl, mash the black beans and avocado together until mostly smooth, leaving some chunks for texture.
  2. Add the finely chopped onion, minced garlic, cumin, paprika, salt, and black pepper to the bowl, and mix until combined.
  3. Gradually stir in the bread crumbs until the mixture holds together. If too wet, add more bread crumbs as needed.
  4. Divide the mixture into two equal portions and shape into patties.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  6. While the patties are cooking, toast the whole wheat burger buns lightly.
  7. Assemble the burgers by placing a lettuce leaf on each bun, followed by the avocado bean patty, sliced tomato, and red onion.
