Ingredients

  • 2 ripe avocados
  • 4 strips of bacon
  • 1/2 cup shredded cheddar cheese
  • 2 large eggs
  • 1 tablespoon chopped fresh chives
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Cook the bacon in a skillet over medium heat until crispy, then remove and drain on paper towels.
  3. While the bacon is cooking, cut the avocados in half and remove the pit. Scoop out a small portion of the flesh to create a larger cavity for the egg.
  4. Place the avocado halves in a baking dish, cut side up, and sprinkle with salt and pepper.
  5. Crumble the cooked bacon and divide it evenly between the avocado halves.
  6. Crack an egg into each avocado half, being careful to keep the yolk intact.
  7. Top each avocado with shredded cheddar cheese and sprinkle chives on top.
