- Chicken breast - 200 grams
- Water - 500 ml
- Rice - 50 grams
- Eggs - 2 large
- Lemon juice - 30 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Olive oil - 1 tablespoon
Steps
- In a pot, add the chicken breast and water. Bring to a boil, then reduce heat and simmer for about 15 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it into bite-sized pieces, and set aside. Strain the broth to remove any impurities and return it to the pot.
- Add the rice to the strained broth and cook for an additional 10 minutes until the rice is tender.
- In a bowl, whisk together the eggs and lemon juice until well combined.
- Slowly ladle a bit of the hot broth into the egg-lemon mixture while whisking constantly to temper the eggs.
- Once combined, pour the egg-lemon mixture back into the pot with the broth and rice, stirring gently to combine. Do not let it boil.
- Add shredded chicken back to the pot, season with salt and pepper, and cook for another 2-3 minutes until heated through.
- Drizzle with olive oil and garnish with chopped parsley before serving.
