Ingredients

  • Chicken breast - 200 grams
  • Water - 500 ml
  • Rice - 50 grams
  • Eggs - 2 large
  • Lemon juice - 30 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Olive oil - 1 tablespoon

Steps

  1. In a pot, add the chicken breast and water. Bring to a boil, then reduce heat and simmer for about 15 minutes until the chicken is cooked through.
  2. Remove the chicken from the pot, shred it into bite-sized pieces, and set aside. Strain the broth to remove any impurities and return it to the pot.
  3. Add the rice to the strained broth and cook for an additional 10 minutes until the rice is tender.
  4. In a bowl, whisk together the eggs and lemon juice until well combined.
  5. Slowly ladle a bit of the hot broth into the egg-lemon mixture while whisking constantly to temper the eggs.
  6. Once combined, pour the egg-lemon mixture back into the pot with the broth and rice, stirring gently to combine. Do not let it boil.
  7. Add shredded chicken back to the pot, season with salt and pepper, and cook for another 2-3 minutes until heated through.
  8. Drizzle with olive oil and garnish with chopped parsley before serving.
