Ingredients

  • Brown rice - 1 cup
  • Vegetable broth - 2 cups
  • Fresh spinach - 1 cup, packed
  • Fresh cilantro - 1/2 cup, packed
  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, diced
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the diced onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed brown rice and cook for 2-3 minutes, allowing it to toast slightly.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, blend the fresh spinach, cilantro, lime juice, salt, and black pepper in a food processor or blender until smooth.
  7. Once the rice is cooked, remove it from heat and fluff it with a fork.
  8. Stir in the herb mixture until well combined, then serve warm.
