- Chicken or vegetable broth - 2 cups
- Fresh cilantro - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are softened.
- Add the diced carrot, cumin, oregano, salt, and pepper. Cook for another 3 minutes, stirring occasionally.
- Stir in the rinsed brown rice and cook for 2 minutes, allowing it to toast slightly with the vegetables.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is tender and the liquid is absorbed.
- Once cooked, gently fold in the black beans and corn. Cook for an additional 5 minutes to heat through.
- Remove from heat, fluff the rice with a fork, and garnish with fresh cilantro before serving.
