- Shrimp - 150 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Fish fillet (cod or tilapia) - 150 grams, cut into bite-sized pieces
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the diced bell pepper and tomato to the pot, cooking for an additional 2-3 minutes until softened.
- Stir in the paprika, cumin, salt, and pepper, allowing the spices to bloom for about 1 minute.
- Add the rinsed brown rice to the pot, stirring to coat the rice in the vegetable mixture.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the seafood. In a separate skillet, lightly sauté the shrimp and fish fillet over medium heat for about 3-4 minutes until cooked through.
- Add the mussels to the skillet and cover for another 2-3 minutes until they open up. Discard any that do not open.
- Once the rice is cooked, gently fold in the seafood mixture and chopped parsley. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
