  • Bell pepper - 1 small, diced

  • Shrimp - 150 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Fish fillet (cod or tilapia) - 150 grams, cut into bite-sized pieces
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
  3. Add the diced bell pepper and tomato to the pot, cooking for an additional 2-3 minutes until softened.
  4. Stir in the paprika, cumin, salt, and pepper, allowing the spices to bloom for about 1 minute.
  5. Add the rinsed brown rice to the pot, stirring to coat the rice in the vegetable mixture.
  6. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and the water is absorbed.
  7. While the rice is cooking, prepare the seafood. In a separate skillet, lightly sauté the shrimp and fish fillet over medium heat for about 3-4 minutes until cooked through.
  8. Add the mussels to the skillet and cover for another 2-3 minutes until they open up. Discard any that do not open.
  9. Once the rice is cooked, gently fold in the seafood mixture and chopped parsley. Adjust seasoning if necessary.
  10. Serve hot, garnished with additional parsley if desired.
