  • Brown rice - 1 cup
  • Chicken breast, boneless and skinless - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, diced - 1 medium
  • Garlic, minced - 2 cloves
  • Bell pepper, diced - 1 medium
  • Carrot, diced - 1 medium
  • Green peas, frozen - 1/2 cup
  • Low-sodium chicken broth - 2 cups
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the diced bell pepper and carrot to the skillet, cooking for another 3-4 minutes until softened.
  3. Cut the chicken breast into bite-sized pieces and season with paprika, cumin, salt, and black pepper. Add the chicken to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in the brown rice, ensuring it is well mixed with the chicken and vegetables.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 25 minutes, or until the rice is cooked and has absorbed the liquid.
  6. In the last 5 minutes of cooking, add the frozen green peas to the skillet.
  7. Once done, remove from heat and stir in the fresh parsley and lemon juice. Fluff the rice with a fork and serve hot.
