Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Tomato - 1 medium, diced
  • Tomato sauce - 200 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Banana - 1 medium, sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced tomato, tomato sauce, salt, and black pepper. Let the sauce simmer for about 5 minutes, allowing the flavors to meld.
  4. In a separate pan, fry the eggs sunny-side up or to your preference, cooking for about 3-4 minutes.
  5. Once the rice is cooked, fluff it with a fork and divide it between two plates. Top each serving with the tomato sauce, a fried egg, and slices of banana.
  6. Garnish with fresh parsley before serving.
