Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Tomato - 1 medium, diced
- Tomato sauce - 200 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 2 large
- Banana - 1 medium, sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomato, tomato sauce, salt, and black pepper. Let the sauce simmer for about 5 minutes, allowing the flavors to meld.
- In a separate pan, fry the eggs sunny-side up or to your preference, cooking for about 3-4 minutes.
- Once the rice is cooked, fluff it with a fork and divide it between two plates. Top each serving with the tomato sauce, a fried egg, and slices of banana.
- Garnish with fresh parsley before serving.
