- Salt - 1/4 teaspoon
- Apricot preserves - 1/4 cup (60g)
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg yolk and vanilla extract to the butter mixture, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for about 20 minutes to firm up.
- On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
- Cut out circles of dough using a round cookie cutter or a glass, about 3 inches in diameter.
- Place about 1 teaspoon of apricot preserves in the center of each circle.
- Fold the edges of the dough over the filling to form a triangle, pinching the corners to seal.
- Place the hamantaschen on the prepared baking sheet and bake for 15-20 minutes, or until lightly golden.
