Ingredients
- All-purpose flour - 125 grams
- Unsalted butter - 60 grams (chilled and cubed)
- Granulated sugar - 25 grams
- Ice water - 30 ml
- Granny Smith apples - 2 medium (about 300 grams, peeled and sliced)
- Brown sugar - 30 grams
- Ground cinnamon - 1 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1/4 teaspoon
- Cornstarch - 1 tablespoon
- Egg (for egg wash) - 1 (optional)
Steps
- In a mixing bowl, combine the flour, 25 grams of granulated sugar, and 1/4 teaspoon of salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 190°C (375°F).
- In another bowl, toss the sliced apples with 30 grams of brown sugar, cinnamon, nutmeg, lemon juice, salt, and cornstarch until well combined.
- On a floured surface, roll out one disc of dough into a circle about 3mm thick. Place it in a 15 cm pie dish, allowing the edges to hang over.
- Fill the pie crust with the apple mixture, then roll out the second disc of dough and place it over the filling. Seal the edges by crimping with a fork or fingers, and cut a few slits in the top for steam to escape.
- If desired, beat the egg and brush it over the crust for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the apples are tender. Let it cool for at least 10 minutes before serving.
