Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter - 60 grams (chilled and cubed)
  • Granulated sugar - 25 grams
  • Ice water - 30 ml
  • Granny Smith apples - 2 medium (about 300 grams, peeled and sliced)
  • Brown sugar - 30 grams
  • Ground cinnamon - 1 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Cornstarch - 1 tablespoon
  • Egg (for egg wash) - 1 (optional)

Steps

  1. In a mixing bowl, combine the flour, 25 grams of granulated sugar, and 1/4 teaspoon of salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 190°C (375°F).
  4. In another bowl, toss the sliced apples with 30 grams of brown sugar, cinnamon, nutmeg, lemon juice, salt, and cornstarch until well combined.
  5. On a floured surface, roll out one disc of dough into a circle about 3mm thick. Place it in a 15 cm pie dish, allowing the edges to hang over.
  6. Fill the pie crust with the apple mixture, then roll out the second disc of dough and place it over the filling. Seal the edges by crimping with a fork or fingers, and cut a few slits in the top for steam to escape.
  7. If desired, beat the egg and brush it over the crust for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the apples are tender. Let it cool for at least 10 minutes before serving.
