  • Apple (peeled and diced) - 1 medium
  • Cinnamon - 1 teaspoon
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 2 tablespoons
  • Salt - a pinch

Steps

  1. Rinse the quinoa under cold water in a fine-mesh sieve to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  4. While the quinoa is cooking, heat a small pan over medium heat and add the diced apple, cinnamon, and a pinch of salt. Sauté for about 5 minutes until the apples are tender.
  5. Once the quinoa is cooked, remove it from heat and fluff with a fork. Stir in the maple syrup and vanilla extract.
  6. Serve the quinoa in bowls, topped with the sautéed apples and chopped walnuts.
