Ingredients

  • Almonds - 20 whole (approx. 30g)
  • Unsweetened shredded coconut - 1/2 cup (approx. 40g)
  • Coconut oil - 2 tablespoons (30g)
  • Sugar-free chocolate chips - 1/3 cup (approx. 60g)
  • Erythritol - 2 tablespoons (30g)
  • Vanilla extract - 1 teaspoon (5ml)
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine the unsweetened shredded coconut, erythritol, vanilla extract, and a pinch of salt. Mix well until combined.
  2. Melt 1 tablespoon of coconut oil and add it to the coconut mixture. Stir until the mixture is moist and holds together.
  3. Divide the coconut mixture into 4 equal portions and form each portion into a small rectangle. Place them on a parchment-lined tray.
  4. Press 5 almonds into the top of each coconut rectangle, then freeze for about 10 minutes until firm.
  5. While the coconut bites are freezing, melt the sugar-free chocolate chips and remaining tablespoon of coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  6. Remove the coconut bites from the freezer and dip each one into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined tray.
  7. Place the tray back in the freezer for another 10 minutes to allow the chocolate to set.
  8. Once set, remove the Almond Joy Bites from the tray and serve immediately or store in an airtight container in the refrigerator.
