- Almonds - 50 grams
- Unsweetened shredded coconut - 100 grams
- Sweetened condensed milk - 120 grams
- Dark chocolate (at least 70% cocoa) - 100 grams
- Coconut oil - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Sea salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and line a small baking dish (approximately 8x8 inches) with parchment paper.
- In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of sea salt. Mix until well combined.
- Chop the almonds roughly and fold them into the coconut mixture.
- Spread the coconut mixture evenly into the prepared baking dish, pressing down firmly to create a compact layer.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely in the dish.
- While the base is cooling, melt the dark chocolate and coconut oil together in a microwave or using a double boiler, stirring until smooth.
- Once the base is cool, pour the melted chocolate over the top, spreading it evenly. Optionally, sprinkle some extra chopped almonds on top for decoration.
- Refrigerate the bars for at least 1 hour or until the chocolate is set. Once set, cut into bars and serve.
