Ingredients

  • Almonds - 50 grams
  • Unsweetened shredded coconut - 100 grams
  • Sweetened condensed milk - 120 grams
  • Dark chocolate (at least 70% cocoa) - 100 grams
  • Coconut oil - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Sea salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and line a small baking dish (approximately 8x8 inches) with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of sea salt. Mix until well combined.
  3. Chop the almonds roughly and fold them into the coconut mixture.
  4. Spread the coconut mixture evenly into the prepared baking dish, pressing down firmly to create a compact layer.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely in the dish.
  6. While the base is cooling, melt the dark chocolate and coconut oil together in a microwave or using a double boiler, stirring until smooth.
  7. Once the base is cool, pour the melted chocolate over the top, spreading it evenly. Optionally, sprinkle some extra chopped almonds on top for decoration.
  8. Refrigerate the bars for at least 1 hour or until the chocolate is set. Once set, cut into bars and serve.
